Żubr

Europe's last wild lowland bison graze in the Białowieża Forest, in Żubr's home corner of Poland — and this pale, easy-drinking lager from Białystok put one right on the label. In a market full of eagles and crowns, Żubr picked the animal you can actually go and see.

The beer's address matters more than its birthday. It comes from the Dojlidy brewery, where brewing on the site traces back to 1768, though the Żubr in your hand is a modern brand built on that old ground rather than a recipe smuggled through three centuries. What made it a national favorite was advertising of rare patience: quiet forest footage, one unhurried bison, one gentle pun per commercial — no beach party, no shouting, just an enormous animal doing almost nothing, unforgettably.

Żubr belongs to Kompania Piwowarska, Poland's largest brewer, which passed to Japan's Asahi Group in the great shake-out of global beer mergers — so the bison now reports, distantly, to Tokyo. In Poland it remains one of the beers you actually see in hands, from Białystok bars to Warsaw corner shops.

Bright gold with a loose white head and lively bubbles. The nose is mild — a little grain, a faint honeyed sweetness. It drinks light and gently sweet up front, with a low, grassy hop bitterness tidying the finish. Cold, unfussy, and made to sit beside grilled kiełbasa at a summer fire — a beer that does one job and does it evenly.
