Guinness

Guinness is the dry Irish stout that defines the style: a near-black beer with a creamy white head, brewed at St. James's Gate in Dublin and poured in pubs on every continent. For many drinkers it is the first stout they ever taste, and its two-part pour has become a ritual in its own right. The brand's identity — roast, cream, and patience — has stayed remarkably consistent while beer fashion has cycled around it.

Arthur Guinness signed a famous 9,000-year lease on a disused Dublin brewery at St. James's Gate on 31 December 1759, at a rent of 45 pounds a year. The company later bought the site outright, but the lease remains one of brewing's best origin stories. Growth was relentless: by 1886 St. James's Gate was the largest brewery in the world, shipping porter and stout far beyond Ireland.

The modern pint arrived in 1959, when Guinness mathematician-brewer Michael Ash led the invention of nitrogen dispense, launched for the company's bicentenary — the technology behind the tight, creamy head that now defines Draught Guinness. Since 1997 Guinness has been part of Diageo, the drinks group formed by the merger of Guinness plc and Grand Metropolitan, and the Dublin brewery still anchors the brand.

Roasted barley leads with coffee and dark-chocolate notes over a surprisingly light body, and the nitrogen pour adds a dense, creamy texture. The finish is dry and gently bitter rather than sweet.
