KIRIN ICHIBAN

KIRIN ICHIBAN is Kirin's flagship lager, built on a single unusual brewing decision: it uses only the ichiban shibori, or "first press" — the free-run wort that drains from the mash before any sparge water is added. Launched in 1990, it turned a process detail most breweries never mention into one of the most successful beer brands in Japan.

Conventional brewing blends the first wort with second runnings rinsed from the grain; Kirin's method discards those later runnings entirely, an extravagant use of malt that the brewery credits for the beer's smooth, rounded flavor and low astringency. The gamble worked: Ichiban Shibori grew into Kirin's best-selling beer and remains its standard-bearer at home and abroad, brewed today under the umbrella of Kirin Holdings.

The name works on two levels — ichiban means both "first" and "number one" in Japanese — and the brand has kept the first-press method at the center of its identity for more than three decades, a rare case of a mass-market lager marketed on brewhouse technique rather than lifestyle.

Smooth and subtly sweet, with soft, rounded malt from the first-press wort, very low astringency, and a clean, quietly bitter finish.
