Cantillon, founded in 1900 and still family-run, is the last lambic brewery brewing inside Brussels itself, and the working building doubles as the Brussels Museum of Gueuze. You walk past the coolship, the barrels, and a century of unmodernized equipment while the brewery works around you, then finish with a tasting of lambic, gueuze, and kriek that spontaneous fermentation cannot produce anywhere else at this address. Note the rhythm before you go: closed Wednesdays and Sundays, doors at 10:00 with last entry mid-afternoon, and a short annual shutdown in late July.
